Sunday morning cleanse

Sunday morning refresh to get me ready for the week.

Sunday Smoothie
1 apple
Handful of spinach
1 banana
1 celery stalk
1 raw beet root

Egg muffin recipe

This week, I did egg muffins for breakfast. If you follow any low/no carb diet this is usually a tried and tested breakfast staple. As I have to do the drop of my boys to nursery, I have less time to fix my breakfast in the morning. I am usually getting myself and the boys ready to hustle to drop them off and catch my train to be in work by 10am. (Yes I have very hectic mornings). These egg muffins make my life easier.



Veggie Egg Muffins
adapted recipe from Delicious by Dre
Makes 6

3 sachets powdered egg whites
2 whole eggs
½ sweet peppers
¼ cup mushrooms
¼ cup spinach
Salt and pepper to taste

Instructions:
1. Preheat oven to gas mark 5
2. Prepare the powdered egg whites and then mix in 2 eggs
3. Add all other ingredients and mix well
4. Line muffin tin with with muffin liners
5. Spoon in 4 tbsps of the mixture
6. bake for 20 minutes
*you can add turkey or bacon

I love watermelon so bought one today and already cut it up so anytime I feel peckish it is there. All my meals are prepared and some have been cooked and frozen.
